Cheese and salmon platter

If you are looking for something to complete your picnic basket or your cheese platter, but can't bear the thought of turning the stove/oven in this heat, maybe you would like to try this easy and healthy alternative. Best paired with a glass of dry sparkling wine.

Ingredients:

  • 300 g smoked salmon
  • 150 g cream cheese, plain
  • a pinch of salt
  • gelatine

Instructions:

Prepare 1 sheet gelatine as per the instructions on the pack an put in blender together with the thinly sliced salmon and the cream cheese. Blend until smooth. Pour in the mould of your choice and leave to set in the fridge for 4 hours or until serving.

Remove from mould and garnish with lemon slices and fresh dill, if you have, or sprinkle whatever green herbs you have around (I went for dried parsley), and serve either with fresh baguette or with thickly slices of cucumber, for a more forgiving effect on your waist.
